Mirassou California Pinot Grigio reveals intense aromas and flavors of white peach, baked apples, and juicy pear with notes of citrus. |The grapes from the Lodi Delta were harvested at night and quickly pressed while the Russian River Valley fruit was harvested by hand and whole cluster pressed. Both methods were used to avoid color extraction and bitter skin phenolics. To maintain the crisp fruit flavors of the vineyards, the wine was slowly fermented at cool temperatures of 55 to 60°F for 14 to 18 days. We then used yeast X5 to coax our peach, apple and citrus flavors in the wine. No oak was used in aging to allow for optimal expression of the true aromas and flavors of the Pinot Grigio grapes.
